i need some help, it's for a research project and i have no idea how to begin.

should i use liquid chromatography or HPLC to test for methyl salicylate from menthol liquid and eucalyptus oil? and why?

Have you no access to GC? Look at column manufacturers websites for GC chromatograms.
Varian,Restek,Agilent etc.

MS from Menthol is an easy GLC application. I assume you meant Gas-Liquid Chromatography. From the oil I would have to look up application info from Agilent, Supelco, Restek, Alltech, etc

Waters has a nice site for HPLC applications.

Just look at the web hits and you will find lots of info, easy and free.

You can use a GCMS with a DB-wax or DB-FFAB 30 m 0.25 mm (for water sample) to analyse your oil.
